Okay, so I started Aspen on PMR on Jan. 18 and he had soft serve poop on the 19 in the evening. Only once though. His poop is normal now and no other problems. I started him with tilapia in the mornings and quarters in the evenings. Should I stick with this for a few more weeks, or should I look for other meats?

Stick with this for another week, then add something like bone in turkey (necks) to his diet a few times for a week. Are his stools normal now?

Yes. He goes only once a day and they are small and whitish.

I think he's even lost a few lbs. but that's okay...I wanted him to.

Drop the talapia for a few weeks. Read my web page linked in my sig.

I have read it many many times and completely understand it. But, he's doing great on tilapia...and his poo issue is gone. I don't understand why I would drop it?

There's not a real specific reason why to drop it. Most dogs switched to
raw start out on chicken exclusively, but since Aspen is doing so well I don't see any reason why you should drop it. From what I remember you are deciding to use tilapia as your main protein source instead of chicken right?

I'm doing tilapia in the mornings and chicken quarters in the evenings...
Yeah I'd say to stick with it for a couple more weeks then add turkey necks. I'm glad he's doing well, how do you like it?

I like how he really enjoys it!! Makes me really happy that he's happy...

If his stools are firm, there is no reason to drop the talapia. Fish just isn't a good stool firming food in the beginning.

That's great to hear, I'm glad you're just as happy as Aspen is
I'm tempted to start introducing organs. He's doing so great. Should I wait or give him liver tonight?
I would honestly wait. Its only been just over a week. He has been doing great so far, but it would really suck for him to take a step back. When making the switch, you don't want to skip steps, or get ahead of yourself. Most dogs switched to raw don't have their first organ meal until 2 months into it. Will it cause serious damage if you do? Nope. Would it hurt to wait a bit longer? Not at all. It hasn't been long enough for him to be missing out on essentials that he will go into malnutrition from the lack of organs.

What exactly has he had so far? I mean a daily meal plan?
Tilapia in the mornings and chicken quarters in the evenings...

This is what I started with and I plan to keep him like this for another week or so and then I'll start turkey necks...
I would start with a week of turkey and then add in organs if he is still doing well.
