I'm so jealous of you and your venison. Definitely start adding that to the dogs' meals and see how they like it, venison is great for dogs!I'd follow RFD's advice about the feeding meatier meals, too.
About the cold, dry thing, I completely understand that being a factor. Heck even I get dry skin in the winter time.
Do you think a humidifier would help?
